I own a 1987 900-t convert with less than 70,000 miles and do not have the complaints you have. Yes it's not a quiet as my main car Volvo but after all it's a sporty car.
*Yes there is body flex. ( the doors will stick if you jack up one side)
* I hate any type of creaking etc . so I minimized this by using pieces of sponge under and iside the dash and also dabs of clear silicone at problem areas.
* Mine is a mildly tweaked turbo (APC and exhaust)which is no sloutch and realy comes to life at highway speeds
* Mine seems to handle very well - my wife gets white knukles everytime I try to reach the limit at highway ramps. ( I have good tires and suspension)
***My only concern is the cost of maintainig a Saab- even though my Saab has relatively low miles I am on my second transmission-clutch-water pump- heater valve-master clutch cylinder- had electrical problems- turbo hooter valve-also if my wife was here she would probably add a few more items that as she puts it I always conveniently forget.
