Double clutching is used to downshift. You let the clutch out breifly and blip the throttle to raise the rpms of the engine and input shaft before depressing the clutch and sliding into the lower gear. I'm not sure that what you are doing is really doing anything.
A bad inner drive joint on one axle will cause the steering wheel to vibrate under acceleration and when it gets bad enough it will vibrate above a certain speed. (My '78 99 that I drove across the country 12 years ago had a bad right side inner driver and it vibrated so badly above about 58mph that I had to keep my speed below that. It was a looo...ong trip.)
