Bear with me a little since I don't have the part in front of me, but they *are* adjustable. I'll leave it up to other posters to tell you how to gain access to the thing, since my experience is with older 900's and 9000's in which they're accessible under the hood.
Basically it's a little metal thing that's about 3" by 1.5" by 1". The electrical connectors are on one end, and the capillary tube exits near the other end. On the side opposite the one with the connectors, there's a screw. Turning this screw will adjust the temperature setting.
One thing you might want to do both before and after you adjust it is monitor the temperature / compressor cycling for a while and see if it's stable. One thing I've observed with these thermostats as they get old is they tend to switch on and off erratically. The only solution to that problem is to replace it, which should cure your temperature problem also.
