You didn't say which version of cooler you have. The 8V mounts alongside the radiator housing below the left front headlight. The 16V version sits below the bumper behind the air dam and mounts to the car body. The point to making sure to drop the unit first before untightening the hose connection fittings applies to the 16V version. It's a situation where there's two joined six sided hex nut fittings - one attached to the cooler, the other to the hose. You hold one while you loosen the other. If you just crank on the one without bracing the other you'll probably end up just shearing off the cooler side fitting. Gaining access to both sides of the hex fitting requires dropping it down first. The 8V connections are different, but easily accessible once you remove the bumper and air dam.
Is it possible that the hose itself is the part leaking on your car? Those hoses are prone to drying out and turning brittle and eventually crack. I bought a vintage car two years ago with several oil leaks, including the OC hoses which had cracked at the top where the hoses connected to the oil filter housing, and the oil would leak out and run down the length of the hose to it's lowest point before dripping. One hose made a mess in the engine compartment while the other hose dripped oil clear down to the cooler itself and clogged the external surface with oil and dirt, essentially rendering it ineffective as a cooling device. To fix I replaced the hoses. Made them myself actually, which is another related topic.
