Removal is basically a matter of unbolting things. Before proceeding you may want to go to an AC shop and have them remove any freon still left in the system. However, it's simpler and cheaper just to remove the drive belt and leave the rest in place.
However, don't expect removing the AC or the drive belt to improve mileage. Until the AC is engaged, the engine is only having to freewheel a few pulleys which puts an insignificant load on things.
