I have a hunch that your pressure booster could be leaking. Especially if the idle fluctuates when you hit the brakes. One test for a bad pressure booster is with the engine off, pump the brakes 20 times or so until the pedal gets hard. Then start the engine normal pedal feel should return and you should feel the pedal drop slightly but not to the floor.
However, if after you rapidly pump the brakes, the pedal gradually sinks even BEFORE you have started the engine, you probably have a master cylinder leak. With an internal master cylinder seal leak there would be no external fluid leakage, so fluid resevoir level would remain constant. The piston is unable to force fluid down the lines because the fluid is slipping past the seal in the cylinder.
