When you changed the clutch parts, did you put in a new pilot bearing?
Along Street's line of thought, if it will go into gear with the engine off, but not when it's running, then the pilot bearing is a prime suspect. I've seen a lot of them that will not turn by twisting with finger pressure. When they don't turn freely, they transmit engine torque to the primary shaft whether or not the clutch pedal is depressed.
But it's good that you have good clutch pedal pressure.
