You might have a failed (or failing) heater valve. There's a kind of pushrod that moves a gate valve up and down in the valve body. It goes through an O-ring that eventually leaks. Your fiancée might be smelling coolant.
Depending on what year the car is, it might have a brass heater valve or it might have a plastic one. The brass ones can corrode and stay in one position keeping the heat on. Or, if it's a plastic one, the heat adjustment rod may have fallen off. You can access the heater valve through the left speaker cover and from underneath the dash, depending on what else you need to do under there.
