I didn't do the Bentley procedure (remove oil filter, etc.). Just packed the pump, and left the rest alone. I did drain the oil down first, but that was because I did and oil change when I first started the process, and just didn't put any oil back in until after the pump was back on.
I reassembled the engine, and put the belts back on before cranking. I did crank with the ignition and fuel pump disabled, just get get oil pressure up. The minimal extra load of the belts isn't going to mean anything. I guess you could do it without the belt, just in case you figure you need to dive back in.
I've never had a problem with the oil pressure not coming up. It just takes an uncomfortably long time for the pressure to come up (light to go out). Uncomfortable in that I never like hearing an engine turn without oil pressure. However, the engine is unloaded, and there is plenty of oil on the surfaces to protect them while you crank. It would be an issue if you had just assembled a dry engine.
Be aware that oil pressure when cranking is a function of engine cranking speed, which depends on the battery. And the vaseline doesn't pump great. If you want the engine to crank faster, pull the spark plugs. Just make sure the area around the plugs is clean (I clean it out with a shop vac BEFORE pulling the plugs). With the spark plugs out, the pistons will suck stuff in. A little dust from the air is OK, but don't leave the holes plugged with paper towels, or you'll ingest one (and that won't be pretty). But without spark plugs in, and with the throttle wide open, the engine will crank faster and the pressure come up faster.
I've probably spent more time writing about it than it will take to do it.
