They really aren't all that fast from a dead stop - just the way it is. That's the result of a low-compression engine (which accommodates turbo pressure boost) and the physics of the turbocharger.
Like you experienced, they are in their element at highway speeds and going up hills.
The amount of boost you get depends on quite a few things, including the load on the engine, air temperature, gas grade, whether you're using the right type of spark plug wires to prevent RF emissions, state of tune, ignition timing, vacuum leaks, etc. The APC system kicks down the boost when it detects knock, and all of those factors play into whether you get detectable knock.
Vacuum leaks are the bane of the turbo driver. If you haven't done so already, change out the vacuum hoses and the rubber bushings that hold the vacuum nipples into the intake manifold and valve cover. The original vacuum hoses get brittle after a decade or so and develop more pinhole leaks than you have time to trace. It's personal preference, but a lot of us use silicone vacuum hose - it takes about 15 feet of 3.5-mm hose to replace what's under the hood. I get it for about $1 per foot at a local speed shop, so it's relatively cheap to get a few feet as spare.
The rubber bushings are available from the dealer and from many of the site sponsors for a few bucks each less than the dealer prices.
