I've always changed my O2 sensors at near the recommended intervals. My 85T would start getting worse and worse mileage right before the very first time I changed the O2 sensor which was at about 75k miles. It also started to idle faster. After the new O2 sensor it idled great and the fuel economy really improved.
The O2 sensor in my BMW definately affects fuel economy. When my economy starts to drop I replace the O2 sensor there. It is normally almost right at the expected interval. I never wait for the CE lights or major drivability issues.
