My '92 900s 3-door exhibits the same symptoms. Since my A/C is inop (and compressor actually removed from the car) I jumpered the A/C pressure transducer, which allows the 2nd radiator fan (the AC fan) to run when I "turn on the A/C" by pressing the A/C button on the dash. I just did this last week and the weather has been cold since, but I expect the extra cooling from the 2nd fan to prevent the temp from climbing quite so high.
Others on the board have wired the A/C fan differently, so it comes on with (a) the A/C and (b) with the radiator fan, automatically. That would actually be a better way to implement it.
Good luck-
KR
