a couple of things.

first, if your AC is working then turning it on may, or may not, help the car cool down more. The AC compressor adds load to the engine if it is working. If it is really hot and your radiator is marginal this may not help.

As a test, try turning the heat all the way on and the inside fan to the max speed (it's the big arrows on the dial). If this cools your engine down, even just the width of the needle, you have a problem in either your thermostat or your radiator or both.

When you did the fluid flush did you "burb" the thermostat? There is a fitting on the top of the thermostat that you need to open (when cold!) to see water/antifreeze dribble out. if there is an air pocket in there sometimes it makes the thermostat do funny - wrong - things.

You mentioned that the car was hot one time when you stopped, came back and restarted and it read hot, and then cooled down right away? I'd change the thermostat (use a Saab one 82 degrees - just go for it) right away.

Next, if you drive on a freeway at about 55 or so and the engine will not cool off (with the radiators fans off) to about mid sweep of the NOT RED portion of the dial I think you need to consider a new radiator. When you did the flush did you drain the radiator? did you open the valve on the bottom of the radiator near the battery? If not then try it one more time. This time also completely remove the screw in valve and after draining fluid. then put the tip of a small screwdriver in the radiator (where the valve screws in) and gently move it around. you are looking to see if any crud/gunk/glop is in there. if so, new radiator for sure.
