My SPG was doing the same thing last summer. Low pedal, high pedal, here today, gone tomorrow. I bled the system and it was good for about a week. Pulled the master and swapped with a known good used one and lasted for about a week. Pulled the slave and found a pinched o-ring which caused a slow leak. Replaced all the o-rings and was good for another week. Pulled the slave again and no problems found. Pulled the master and found a broken return spring inside the cylinder, which didn't allow the cylinder to return to get a new gulp of fluid. The pedal height felt good, but the internal piston on the master was not returning fully. Replaced the spring with a used one and everything returned to normal. I now have about 1/8" play in the clutch pedal and the feel is consistent.
