Todd, you can grind off the screw that secures the front of the cat heat shield from under the car. I have done this without removing the interior. I tack weld a nut to the sheet metal where the screw comes thru. In the series of photos at the link you can see how I did it after I removed the interior. You will need to enlarge the hole in the heat shield so you can use a screw to match the nut that was welded on. I do this on all of my cars so the next time the heat shield needs to be replaced it will be much easier.
