Any ride height difference you might see would be a result in minor variations in vehicle weight: the Turbo weighs more than the S and base model. Also, it's not uncommon for Saab springs to "take a set," or sag with age (their rate does *not* change when this happens), so it's hard to compare one c900 with another.

Some convertibles had different springs than the tin-tops, which may be why they feel differently. Whether they had different springs depended on whether they had AC, manual or auto. tranny, and a turbo. Also, the convertible body is not nearly as stiff as the tin-tops, which can affect the ride quality -- the body stiffness likely plays a larger role than the springs. (Note that Saab never fitted the "sport" a.k.a. SPG springs to any convertible, even the spanky ones with SPG body claddding.)

It could be tires, too. Tires have a spring rate that varies from one brand and model to the next: some tires' sidewalls are quite stiff, whereas others are like marshmallows.

Finally, if "sudden changes in elevation lead to the drive wheels losing contact in a corner or the mud flaps scraping in the back," then it is quite possible that your shocks have worn out. If the shocks can no longer control the springs compression/rebound, then the wheels can easily become airborne. In my experience as a shadetree, I've found that Saab shocks are not particularly long-lived.
