...and out the back side, as Paul suggests, rather, I'd try just backing it out.
The threads should be clean and easy to turn as it's not an area that rusts, and with no pressure on it it should turn nicely.
Where did it snap, at surface of pressure plate shell, or flush with flywheel or just sub the surface? Chances are it's got a little burr to it at the fracture line that's binding on the flywheel threads, if it snapped flush or sub-flush.
First thing I'd try is grind a point on a nail set or a hardened masonry nail, then use that to try to spin bolt out. Tap it into edge of screw but not too close to outside so you don't jam metal into flywheel, then drive it in counterclockwise direction with hammer taps, kind of dialing the stub out. Once enough of bolt is above surface, of course, grab it with pliers or vise grips and spin it out.
Next option is drilling a hole in it, try with a left-hand drill bit (NAPA has em). Chances are the pressure of the drill bit and CCW spinning will just wind the stub right out; if not, tap an easy-out into the hole once it's deep enough and that should easily work.
Yeah, as to your pressure plate problems, make darn sure disk's raised, spring side is towards pressure plate.
(What was up with the slave cylinder, where was it leaking, if I may ask?)
