If the thermostat is more than two-three years old, replace it. They are moving parts, and they wear out.
Remember a few things - the temperature gauge measures the coolant IN the engine. The thermostat is the valve that lets coolant flow to the radiator. The radiator fan comes on when the RADIATOR gets hot. So if the thermostat isn't passing much coolant to the radiator, the engine will be hot, and the radiator cool. So the fan won't come on.
The purpose of the radiator fan is to replace the airflow you miss when the car isn't moving. It shouldn't be coming on at speed - only when the car hasn't been getting much airflow.
One worry can be a clogged radiator. The engine will run hot, and if the clog prevents coolant from getting near the fan thermoswitch, that doesn't help.
Step 1 - replace the thermostat. It may be sticking, or just old. Going to a cooler thermostat (82 instead of the stock 87) is a good idea. While you're at it, flush the system. It is a system, so replacing one part may not help if the rest of the system is tired. If that doesn't help, I'd suspect the radiator.
