Head removed-what's knocking?

Hi-
I removed the head on my 91' 900 S, 105k mikes to try to figure out what is causing a knocking sound. I bought the car for $350 from a woman who said it was "rod knock." She had a shop check out the engine and they could only tell her "you have a knock in your engine."
So the head is removed and now sitting on my work bench. Is there anything I can do to tell if the knock was coming from the head? I used a stethoscope when the engine was running and it seemed to be coming from the valve head. (note: the knock is not valve chatter, its something else). Should I just bring it to an auto machine shop and have them look at it? Does it need to be a machine shop familiar with SAABs or will any quality shop do? Should I remove the cams before bringing it in?
As for the engine block-- The pistons seem pretty snug in the cylnders. From what I researched in this board, rod knock causes the piston to be loose in the cylnder. Is there anything I can to do to investigate the block now that the head is off?
Also, the combustion chamber is caked with carbon, will a machine shop deal with that or should I clean it? Thanks!!
