The .1a antenna trigger is all you'll need to make the antenna go up and down. The reason why some head units have a dedicated antenna trigger (instead of a single amp/accessory/antenna trigger) is so it can put the antenna down when using CD/USB but still keep the amps etc. turned on. It's a nice feature.
The Saab brown/white "dash illumination" wire is connected to the rheostat to the left of the steering wheel that controls the brightness of the instruments. Mostly on older stereos, this allowed you to tie in the stereo brightness to the dash brightness. Many newer steroes with more advanced dot-matrix or OLED displays or cheaper stereos don't support this dimmer feature. You can simply leave it disconnected.
What kind of stereo did you choose? I've been exceptionally happy with USB-equipped stereos and have purchased several for experimentation. I haven't found the perfect one yet - each different model/brand has unique desirable features, but there isn't one that does everything perfectly. I think I've been happiest with the Kenwood in my convertible, as it seems to have the broadest compatibility with mass storage devices - including an 80gb IDE hard drive.
