I replaced the covers in my '86 SPG with the saabstuff ash grey covers. Wasn't exactly an easy job but with patience is very do-able and I'm very happy with the results - their covers are well made of very good leather and fit well. One tool that helps a lot is a pair of LONG needle nose pliers.
I found that the ash grey had a slight green cast while the buffalo grey had a violet cast so the new covers didn't match the door panels, side panels and lower dash color very well. I had the folks at JustDashes mix a color match spray for the vinyl parts. They did a great job.. their product(called Fade Away) is lacquer based and is easy to apply with a touchup gun. I did the interior in my car about two years ago and the vinyl surfaces as well as the new leather still look perfect. I've included a link to JustDashes for you if you want to check it out.
BTW, if you're replacing the head rest covers, putting a plastic grocery bag over the foam on the head rest first is about the only way you can get the new covers on without tearing the seams. As I recall, I used a plastic bag on the rear seat arm rest as well to ease the cover over the foam.
