From what I've read in their own pitch, the one that's a branch of an Australian company does it really right. Strips down to the steel shell, uses molds it has made from measuring dashes, then a vacuum-molding process to make a new outer skin, with frame inside it, filling the voids with a flexible foam.
I think their outer skin and their foam both beat the original for flexibility and the outer skin has high UV-resistance, more like the dashes on newer makes of cars.
The Saab original dash is 60's technology and any one you buy new from a dealer is probably New Old Stock. Even if stored in the dark and in an air conditioned warehouse and kept in plastic wrapping, it will have lost some of its life just by the plastic aging.
Still and all it would take owning an otherwise showroom gem of a car before I'd consider a new or re-covered dash; maybe one of the dash covers I could see springing for.
