Ran my SAAB like this for over three years and found no problem in handling - I simply cut the belt and went as is. There is some debate here on whether to drain the pump completely - I did not. Going without PS improved handling in winter on snow in my opinion and has no effect on high speed driving. Where you will notice it is parking - builds up muscles and forces you to keep your tires properly inflated.
Apparently euro Saabs had manual racks with slightly better ratios.
Eventually (this last year) re-installed a rack taken from an 84 that was not leaking because of notchiness that was developing in the the non ps rack.
