what old saab says
Try cleaning the sender connector too until its shiny - if you are looking to replace it pull one from a wrecker - now is a good time to get to know your local wrecker as parts are getting harder to find and costly too
if not the sender its probably a ground issue
finally if this is new to you - I have found temp readings a bit quirky on these cars - when the stat opens and closes rapidly in the first 15 minutes or so the reading does flutter a bit as coolant rushes past the sender. It will climb near the red zone too - all sort of normal - usually happens driving around town.
However if during a lengthy highway drive the reading doesn't settle down to the mid point or lower and continues to jump around then you have a sender or ground issue. Usually on the highway the reading will be rock steady at a constant speed.
