The rebuild itself is pretty easy, other than getting it out of the car and back in.
However, unless you're very lucky, the bore will be pitted, and the new seals will be scraping along these pits, and fail fairly rapidly, necessitating another R&R session,at least. I'd at least make sure you can get a rebuilt/new Clutch MC fairly quickly before starting the job.
As for bleeding, you ONLY want to pressure bleed it. To do this, you apply a small amount of air pressure to the brake fluid reservoir. This forces the fluid through the system gently, out through the bleeder on the slave, and without starting to wear on the seals. Much more effective than pumping the pedal or vacuum bleeding from the slave bleeder.
There are devices on the market that can do this, or you can make an improvised device from an old brake reservoir cap and a schraeder valve, and use a bicycle pump. Just be careful to keep the fluid topped up.
