Sorry to see you replaced the temp sensor and it was not the culprit. I was assuming you have a VOM and close to accurate temp guage.
I guess at this poimt I am giving advice so.... If you plan on keeping these now "old" Saabs running, then I think you have to pick a course. Swapping out parts can get expensive pretty quick so you either have to buy some basic tools or limit yourself to the heavy lifting basics. By that I mean if you eliminate all the vacuum leaks and have cleaned the throttle body you have done the heavy lifting. I decent Saab mechanic should be able to go through all the fuel injection trouble shooting in less than two hours. You are then likely facing one specific repair. Alternatively, if I were confronted with a car with more than one vacuum leak I would change out all of the vacuum lines and do a bunch of other stuff that would value your heavy lifting at about 4-5 hours labor.
OK, enough advice. I bought a Phillips VOM 20 years ago for about $25. I recently replaced it with a decent Fluke for $100. I use an old analog VOM that was actually a Maytag service tool for a temp guage. That, dielectric grease and a set of jewlers files is about all it takes to do the troubleshooting as presented in the Bentley manual. It is fun too.
And is the ground bundle at the cylinder head corrosion free and tight? That can be a nightmare wild card in all kind of problems.
