you'd refer to crown wheel markings. Quote from Saab Service Manual 4:1 Manual Transmission:
consider you reading the following markings: 870488 9:33 84-01 92 -17 1330
Breakdown:
970488 = item number (not part number)
9:33 = ratio
84-01 = production and identification date
02 = material code
-17 = backlash of 0.17mm (N.B.: If this information is not specified then assume 0.17 +- 0.05mm)
1330 = matching number which is also stamped on the pinion
But whatever you set your backlash to it's worth checking the gear mesh using some paint. CMyles advises going with clown grease-paint (I don't know where he got it from, but he appears to have lots if this make-up) while I think one can safely go with common oil-paint that should have a nice adhesion and should easily be removed with e.g. gasoline or such.
I don't quite understand what you're saying about the torque, but as far as I get it - it's quite ok that it's hard to spin the crownwheel right after you put all those new bits all together.
