What I do on mine is use a flywheel grinder so I only remove an absolute minimum then countersinking afterwords shouldn't be necessary! Even with the best brake lathes / operators the machine just isn't accurate enough to only remove the minimum that can be remove with a flywheel grinder. Also with a flywheel grinder you can see what you're doing as you go!
