If your hypothesis is correct (air trapped in the system) it seems like you ought to be able to test it. What if you disconnected the clutch line at the slave and capped it with a female end plug (after bleeding a bit to expel newly introduced air). If you still have 1/2 pedal, the culprit is upstream of the slave. Repeat at MC to exclude or implicate clutch line. If you still have weak pedal at that point (although not as weak, since there should be no travel at the end of the circuit) then I guess it has to be the MC, although I agree that 3x failure there seems unlikely.
Personally, I suspect that the problem is at the slave/throwout bearing. Is it possible that the slave piston is somehow permitted unintended travel before engaging the TOB? Under pressure from the bicycle pump that travel is already in place and you have immediate pressure at the pedal; release the (air) pressure, the piston retracts fully and then you have to push through that dead zone before the piston engages.
Just a couple of ideas, and likely not worth the pixels used to share them. g/l and please let us know what you find.
