The reason you torque down the head in a specific order isn't for the bolts, it's for the head. If they were torqued down wrong retorquing or replacing them won't do any good, whatever damage might be done to the head is already done. You'll know after a while when you do a compression test and see if the gasket is leaking due to a warped head.
Replacing the earlier head with a later head is always great - those oil feed lines are annoying.
