Whirligig Mike has it just right: Heat till they color, then quench, and it SOFTENS copper. Just the opposite of steel, and those used to hardening steel by this process would be surprised.
Try it: Bend a piece of copper electrical wiring till it stiffens up and doesn't want to be bent any more, work hardens is the term, and then hold it in the flame of your gas stove or in a propane torch flame till it's red hot and quench it. It will become as easy to bend as a piece of lead.
Mike also has it right, the noise is telltale, pinging when hard, clunking when annealed.
To anneal steel, you heat it to red hot and then cool it very slowly, best, in a heated oven that drops its temperature over days. You anneal copper instantly by quenching it.
