i know you said you don't want a project, but most of those items you could replace in an afternoon, once you had the parts.
the hood doesn't look too bad, a little tweaking by you and you may be able to run with it as is until you found another. i bet the bumper would be the most difficult normal item. even if the bumper supports are bent, you could have body shop replace those later and run without the bumper until you do that too. the grille i don't know about.
since you put all that prior work into it, it would be a shame to toss it all if the car is basically sound mechanically and rust wise.
perhaps someone from the BB who is close to you could help you on a weekend afternoon.
if you do give it up, keep it from the insurance company even if they total it. then sell it at a reasonable price to someone who would like a relatively easy project car if the frame itself isn't bent (can't tell how fenders are from pic). or sell it as a parts car perhaps?
good luck in finding another ride you like, either saab or not. and again, glad you weren't hurt!
