I have done a couple of windshields and never had to pull the entire dash. However, Sandy does have a point that those clips can rust out and if they do, they could crack your new windshield or cause a leak. Might be good to check those before reinstallation. Don't remove the whole dash though unless you really have to.
I also found that the Bentley did not have any info. Probably because windshields can break pretty easily if you do it wrong, so it's one of those things they probably thought was either too easy to have to explain, or better left to a professional. Either way, it's really not that difficult. Just remove the metal tabs inside the rubber seal on the outside (save them) and push the old glass out with your feet from the inside (careful not to let it fall and scratch the paint). The seal slips right out, and the new one should slip right on. I did not replace this with any of my windshield jobs, but if you do have to just loosen the dash, it's not that hard - on the back side it's just two (or four?) screws through the speaker grilles and a few more under the glove box and the screw on either side of the lower kick panel if you're really going for it. That should make it plenty loose without having to take the whole dash out.
One thing to remember if you have not done this before, if you are using the black windshield silicone, make sure you wear gloves - that stuff will NEVER wash off your hands.
