There are a few different options for tops (I've been looking into this as well lately). Apparently you have canvas or vinyl - canvas lasts longer and is more durable and looks and fits better. German canvas is the best, while there are other options like Stayfast and Twillfast that work okay but are lower quality. Just depends on the standard you hold yourself to and of course, your budget. I purchased a nice looking top from a junkyard a couple of months ago for only $40! The thing is that it wasn't perfect. I thought about it and came the conclusion that if I am doing this job, I don't want to have to ever do it again. So I'll spend the money on new canvas.
Some things to look out for: if you are buying the top yourself from a website, just make sure that it does not require additional trimming. I found one site with a great price for german canvas, but you had to trim your own window hole. Not cool. Also watch out if you are buying the rear window glass as well. Sometimes they will sell you a one-piece top that looks stupid. Other times the glass will be plastic or non-heated. Works, but is not original. Your call. I recently bought the glass-only portion for $150 with free shipping and it was OEM saab, brand new. Great deal! Most sites sell that alone for like $400 though.
If you are looking at getting it done by a shop, expect to pay around $1500-2500 for a nice one. My dad had his done with German canvas for $1500 a couple of years ago. If I had that kind of money, I would probably let someone else do it so I don't screw it up. But I don't, so here I am trying to do the job myself.
