It's more about risking time. The worst case scenario is you do a frivolous in-car head gasket, and let a machinist deal with a broken stud. This isn't all that bad or costly a scenario if you're doing the rest of work yourself, aren't in a hurry, and have a spare car.
There are plenty of things you can do to minimize the risk of breaking a stud - but you always have to be prepared for failure. How long you wait is a pretty good factor. Personally - I'd drive it and get it good and hot, then quench the studs with penetrant, disassemble as soon as you can touch it. Use a collet-style stud puller/installer. use the proper (grade 10) studs, and apply nickel anti-seize to the head end of the stud.
