Over a few clutch master rebuilds, I've had to clamp the master cylinder in a vise and use a bit of force on a fairly long nail pushed through the opening at the threaded end of the cylinder to force the piston out. You have to be careful not to score the cylinder.
If you can get your hands on a brass punch of the right diameter (1/8" or so) that would be a bit safer.
After several years a ring of hardened brake fluid usually coats the end of the cylinder bore so you have to force the piston out. Prior to assembly, I use fine sandpaper to remove the ring, clean with lint-free towels, and rinse with brake fluid prior to reassembly. There are probably solvents that will do the trick, too.
FWIW, the last clutch master rebuild on my car has lasted something like 8 years without any problems. (There have been some other unrelated problems with clutch slaves and the flexible line, but the master has stayed good.)
