What about a radiator being clogged and/or slow... flowing? If your car is at 200K, have you changed that out at all in the past?
You might try one of the infrared thermometers and try checking the temps across several areas of the rad and see if parts are hotter or cooler than the rest?
You could also loosen the reservoir cap, and the system won't be pressurized and therefor won't get as hot. You can then see if the gauge is still performing it's acrobatics. If it is, then that might be an additional indicator that the sender or tstat might be at fault.
