I have EGT in the racecar -- basically the same kind of fuel injection system as the 79, so it's going to be CIS. So, though the engine blocks are different, I think the compression ratios are about the same between the two -- mine is 7.25-1 which is low, but that was the spec then. I just looked up the 1979 turbo and it is also 7.2-1 so right in that ballpark.
When we were running on the dyno, the EGT would climb to 1700F and it was a concern to me. Our injectors are larger, and pushing 7 bar of fuel pressure, so there is just a hint of extra fuel in the air when it's running.
You'll find out pretty quick if one or all the exhaust valves aren't sodium filled if you run it hard.
I'd be more in favor of it running at a lower EGT -- what about your timing -- have you checked to make sure it isn't retarded causing higher EGT, and that it can advance? You have an advancing distributor in that car. So, the timing is mechanically dynamic in your setup. Or, it can be if it works. Usually, those distributors are a wreck inside......
