Thanks Vern and Roger! I hand-tested the fans and noted that the passenger side cooling fan seemed too resistant. 2 days later, took the car out and noted a bad coolant leak started from the front of the engine bay- long story short, the radiator went. Turns out it was the original radiator. Swapped it out for a brand new radiator and new (used) cooling fan to replace the one that exhibited too much resistance. Had a nice, cool drive home with the thermostat barely moving above the midpoint. Fingers crossed this takes care of the issues!
