I just insured my 99 with Hagerty for an agreed value of $20,000($250/yr premium), but I've never thought I would ever get that if I decided to sell it. I based my valuation of what I would want for it if it got damaged on my way to the convention this year, and what I wanted for my 20 years and thousands of hours working on it to make it nice. I could or would never be able to do another one since good bodies and some parts just take too many years to source, and I don't have the patience to do it all over again, but $20k in my pocket would make me feel good.
