Has the car been sitting, not run, for awhile?
A random thing to try: next time it does this, open up the gas tank cap. How much "whooosh" do you get? Does it restart? It's a long shot but who knows...
I had a similar thing happen with my old Jag XJ6...it would run about 40 minutes (almost home) and then die. Would not restart until it cooled down. Turned out the fuel line was too close to the exhaust pipe and it would gradually heat up the fuel pipe until the fuel started to boil...then vapor lock. Again, not too likely on a Saab 900 but something to look at.
