Have you replaced/regapped your spark plugs recently? I was having a shuddering problem and it turned out that my spark plugs were bad/overtightened (I have a '91 9000T). I replaced the plugs and carefully gapped and tightened them and the problem went away. However, you don't have DI so maybe this is less relevant.
It could also be a compression problem, like a leak in the head gasket that only opens up under full boost. On the highway, even moderate throttle will send the turbo well past base boost, unless the APC is somehow limiting it.
Does the same thing happen when you downshift to fourth? Is it only at a particular RPM? How are your motor mounts? How many rhetorical questions does it take to diagnose a shuddering problem?
