Best and safest way is to use ramps. Set your hand-brake, and put blocks behind rear wheels, and have trans in park or in gear. The little bit of time it takes to be extra safe is well worth it!
With most oil pans you will leave a slight amount of old oil behind. The important thing is to have the car fully warmed up and drain the oil as quickly as possible. Have all your tools, drain pan, etc. ready to go. The key is to have all the "junk" in suspension when you drain the oil. In doing so, what little is left behind will be inconsiquential.
I do all my own oil changes. It's easy and it's cheap. (I buy Fram filters at Walmart for $3. each) And it's more convenient, and takes less time overall.
Have fun!
