DOT 4 has superior resistance to entrapping water, has better high temperature characteristics, and is compatible with the plastics and rubbers used in the brake system. I would throw out the bottle of DOT3 - DOT4 superceedes it. Given the price of brake systems, it isn't worth the money.
Do note that DOT5 isn't better - it's different. Don't use DOT5 unless the system specifically requires it. DOT5 isn't compatible with many systems.
I usually have to look around a little, but I can usually find DOT4 (I like Castrol) at an autoparts store. You can do a brake flush with about 1 liter of fluid, but I like to get 2 liters, just so I know I can flush it well.
It's nice to drain the reservoir as much as possible, but it's not necessary to get it all. The new stuff floats on the old stuff, and you still have old stuff in the lines. You refil the reservoir, bleed the brakes, refill, and so it goes. Eventually you get all the old stuff. Just never let the reservoir level drop TOO low, or you'll pull in air and you'll have to keep at it.
If the fluid ran clear from each brake bleeder, and the brakes feel good, then you did it right.
