I probably didn't explain it well. The switch should be adjustable (reference is my '97 Aero), but doesn't look that way at first glance!
The position of the switch body is not what changes, it's how far out the plunger is positioned. And even then, the adjustment mechanism is not visible, basically it's a friction arrangement inside the switch.
When you push the pedal down, the plunger extends. But if you hold the pedal down and pull the plunger out a little with some pliers, you'll see that it can come out farther, so it can make contact with the pedal earlier. I know this seems counterintuitive, like it will break the switch, but that's how it works! I did it myself about 2 weeks ago.
And like I said, don't worry about pulling it out too far (within reason), the pedal will just push it back in.
