There is a type of wrench called a "line wrench" for removing fluid lines. It looks like an open box wrench except that it has all six sides of the hexagon, minus a gap at one of the corners large enough to fit over a (brake or other) line. Wrenches work by pushing on the corners of the nut/fitting, and having five points of contact should work better on soft brass fittings than a box wrench, which has only two points of contact. Measure the size you need with a normal box wrench.
That said, I have rounded fittings using my line wrenches, which are "Torsen" brand, purchased at a large auto parts store - they are not the best, fit a bit loose, flex a bit under pressure, ruin your whole day. Next time I need to do a brake fitting I would be tempted to buy a higher quality wrench, i.e. Snapon, Craftsman, Mac, etc. And I would ALWAYS spray it with penetrant first.
