What is your temp gauge reading? If the fans kicked on after only 2-3 minutes of idling from cold then it sounds like you have more than one issue. My '87 won't kick the fan on until it's been running at least 10-15 minutes at idle and that is from cold on a warm day! If your t-stat is stuck that will certainly keep the engine from warming up properly however it should still get to a reasonable temp to warm you up inside. I would replace your t-stat and temp sensor for the fans.
