It really doesn't matter how long it takes a SAAB technician to replace a clutch; in almost all cases you will pay a professional according to an amount loosely based on the commonly accepted labor time to do that job. This is known as the flat-rate system.
The exact price of this or any job will of course depend on many factors, including mark-up on parts and the labor rate of each shop. This rate can vary considerably depending on where the shop is (rent and other expenses of doing business are higher in NYC than in Boise, Idaho of course). The prices quoted by other posters on this thread are extreme; $500 parts and labor is too low (in most areas of the USA), and $2000 is ridiculously high. It should cost somewhere in the neighborhood of $1000 parts and labor at a SAAB independent shop to replace the clutch kit and slave cylinder. The master cylinder and any seals etc. would be more of course.
Good luck,
Eric H.
