Many times the thermoswitch has the temp stamped into the side. My guess is that unless you (or your mechanic) specified an 82C, you got the 89C (stock). I know I had to special order the 82 thermoswitch.
An important thing to note here - with a properly operating thermostat, thermoswitch, and radiator fan, the difference between an 82C and an 89C is pretty minor - just the stuff that car folks like to argue about. The noticeable difference will be a couple of needle-widths lower on the temp gauge when driving down the highway. The stock system works just fine, so I wouldn't bother to replace the fan thermoswitch, unless you get very bored and want something to do.
My guess - a new thermostat will do the trick. If it doesn't, then there may be other issues with the cooling system, like a clogged radiator. But thermostats wear out, and should be replaced every 3 years or so. That's true of any car, not just Saabs.
