I've been fortunate never to have experienced the host of failures you've experienced. As I mentioned, I've had minor issues with loosening of the small-diameter clamps on the outer boots, and consequent loss of grease, but just reclamped and that was that.
I very much doubt that a CV joint costs the rebuilders $100 or even $20, as they buy in bulk. It's $100 to you and me because hardly anyone buys just the joint anymore -- supply and demand, I say. Most people swap axles these days, especially mechanics billing by the hour.
It is important to check that you have the correct part before installation, ESPECIALLY if buying through Pep Boys, AutoZone or the like. Ask me how I know! I always lay the new axle next to the old and make sure they look identical.
Unfortunately getting the wrong/crappy piece is par for the course at these chains. In fact my biggest beef with them is that the counter help never knows what's happening, and you can never get a minute to speak to one of them because they're helping someone who had to return something because they GAVE HIM THE WRONG PART!!! I truly hate those places.
Buying online has worked out great, and saves money over the chains, I find.
